An approachable, fruit-filled and characterful blend of typical Swartland Chenin Blanc, with Viognier and Sauvignon Blanc – fresh and crisp.
From various naturally growing Chenin Blanc bush-vines planted between1966 and 1983. Like the Chenin Blanc, the Viognier and Sauvignon Blanc blending partners also grow in blocks with varying degrees of decomposed granite. This, however, on opposite hillslopes of the Aprilskloof Valley. The resultant variation in ripening patterns, widens the blending options in the cellar, to perfectly complement the Chenin’s unique and flavourful, terroir-driven Swartland characteristics. No set vinification ‘recipe’ is used; each vineyard block is treated according to its strengths and characteristics. The grapes are hand-harvested into small 20 kg crates early morning, before handsorting. Each component of the blend is kept separate during the winemaking process. After fermentation, the wines are kept for seven months in a mix of old French oak barrels, wooden foudres*, as well as stainless steel and concrete tanks, before the final blend is made up and bottled.
